CASEIFICIO MAMBELLI for INGREEN
Mambelli is an Italian dairy SME since 1970 and is located in a region called Romagna.
We produce typical soft and fresh cheeses and dairy products (like Squacquerone di Romagna DOP, whole
milk ricotta cheese, mascarpone cheese).
Our role in the project concerns the exploitation of the whey side-stream produced by cheesemaking activity.

Role in Ingreen
1. Contributing to the physical-chemical characterization of the whey as feedstock and the optimization of its storage
conditions.
2. Contributing to the evaluation and characterization of the bio-based ingredients obtained from the whey and
particularly for LBA enriched whey, purified LBA and microbial biomasses.

3. Providing its industrial facilities for LBA enriched whey and Yarrowia lipolytica biomass production
We produce Yarrowia lipolytica
biomass using our whey as a
growth substrate.
Strains are provided by UNIBO
and microbial growth is lead in a
20L fermenter for 72h. Stirring,
aeration and salt concentration
were tested to obtain optimal
growth.

4. Leading the production of functional innovative cheese prototypes
We use Yarrowia lipolytica as an adjunct in
caciotta cheese production.
GOALS:
• Ripening time reduction in comparison
with our traditional caciotta
• Avoid the use of the green antimicrobial
natamycin
